Slightly fake Chicken Tagine

I just made this simplified chicken tagine-type thing for lunch, and it was really tasty, so here's the recipe for (mostly my own) reference.

Ingredients

  • 6 chicken legs/wings/breasts with the skin still on
  • One courgette, thinly sliced
  • 3 minced large cloves of garlic
  • Couscous
  • 80g butter
  • Sultanas
  • Vegetable stock
  • 2 tsp harissa
  • 1 tsp honey
  • 1/2 tsp ground ginger
  • 1/2 tsp cumin
  • 1/2 tsp ground coriander
  • 1/2 tsp cinnamon
  • 1/4 tsp salt

Instructions

  • Melt the butter in a large pan
  • Add the garlic cloves, honey, and spices and cook for a few minutes
  • Add the chicken, harissa, and salt and cover it with the spice/butter mix
  • Gently fry for a few minutes
  • Add cucumber slices
  • Add enough hot vegetable stock to cover the chicken
  • Leave to cook - but not boil - for about 45 minutes
  • Make couscous with sultanas
  • Serve in bowls
