I just made this simplified chicken tagine-type thing for lunch, and it was really tasty, so here's the recipe for (mostly my own) reference.
Ingredients
- 6 chicken legs/wings/breasts with the skin still on
- One courgette, thinly sliced
- 3 minced large cloves of garlic
- Couscous
- 80g butter
- Sultanas
- Vegetable stock
- 2 tsp harissa
- 1 tsp honey
- 1/2 tsp ground ginger
- 1/2 tsp cumin
- 1/2 tsp ground coriander
- 1/2 tsp cinnamon
- 1/4 tsp salt
Instructions
- Melt the butter in a large pan
- Add the garlic cloves, honey, and spices and cook for a few minutes
- Add the chicken, harissa, and salt and cover it with the spice/butter mix
- Gently fry for a few minutes
- Add cucumber slices
- Add enough hot vegetable stock to cover the chicken
- Leave to cook - but not boil - for about 45 minutes
- Make couscous with sultanas
- Serve in bowls
