Ingredients
- 250 g tofu, crumbled
- a tin of kidney beans, rinsed
- a thumb-sized piece of ginger, finely chopped
- hot (ideally smoked) paprika
- oregano
- pepper
- soy sauce
- balsamic vinegar
- tomato paste
- olive oil (leftover oil from sun-dried tomatoes or similar works well)
Recipe
Put 1 tbsp of oil into a frying pan and add the ginger. Fry at medium heat for a minute or two, then add the tofu, oregano, and paprika. Stir-fry for about five minutes, then add the beans, 3 tbsp of tomato paste and a generous splash each of soy sauce and balsamic vinegar. Continue stirring and frying for another five to ten minutes. Add pepper to taste.
