Tofu Scramble

I'm currently ill and in bed, so posting's not happening much, but by request, here's a quick recipe for tofu scramble that works great as a filling for wraps.

Ingredients

  • 250 g tofu, crumbled
  • a tin of kidney beans, rinsed
  • a thumb-sized piece of ginger, finely chopped
  • hot (ideally smoked) paprika
  • oregano
  • pepper
  • soy sauce
  • balsamic vinegar
  • tomato paste
  • olive oil (leftover oil from sun-dried tomatoes or similar works well)

Recipe

Put 1 tbsp of oil into a frying pan and add the ginger. Fry at medium heat for a minute or two, then add the tofu, oregano, and paprika. Stir-fry for about five minutes, then add the beans, 3 tbsp of tomato paste and a generous splash each of soy sauce and balsamic vinegar. Continue stirring and frying for another five to ten minutes. Add pepper to taste.
