Gin Mojitoid

This is a variant on the Mojito I've made twice now - once by accident, once on purpose. It's an improvement over the standard version in that it has a more complex flavour, and is prepared in advance. This means there's no fussing around with assembling the drink when it's time to do the drinking. The only drawback is that you do have to prepare it a few hours in advance. I estimate it probably keeps quite well, but I haven't yet had the, er, opportunity to test this hypothesis.

Ingredients

  • 4 limes
  • a bushel of mint, about 4 stalks
  • a mug of simple syrup (half a mug of water, half a mug of sugar, heat up, stir until dissolved)
  • a mug of Cachaca
  • a mug of gin (cheap gin will do)

Preparation

  • Thinly slice the limes
  • Combine all ingredients in a jug
  • Stir vigorously, ideally make gentle use of a pestle
  • Cover and leave to infuse at room temperature for about 4 hours
  • Filter through a sieve, discarding the limes and mint, yielding a milky green liquid
  • Refrigerate, serve with plenty of ice

How does it taste? Quite similar to a normal mojito, but the several hours of infusion add a pleasant bitter taste from the lime pith.
